Grilled Apricots with Goat Cheese and Balsamic Reduction


Take your apricots from your box and halve them. Brush them with a high heat oil (safflower or canola would work well). Place them cut side down on a hot grill and grill for just a few minutes, until they are dark grill marks on the cut side. Grill only on one side. Put a bit of good, soft goat cheese on top and drizzle some balsamic reduction on top (you can make your own by boiling your favorite balsamic down until it reaches the desired consistency). You want the thickest balsamic you can find! Serve warm.
