Cranberry Beans and Black-Eye Peas are two of our favorites in this category, although we do sometimes experiment with other varieties. We usually sell most of our shelling beans fresh, when the flavor is at its height. The beautiful Cranberry Beans have an earthy flavor and can be eaten in cold vegetable salads, or in any warm dish that calls for shelling beans.
