Super Easy Summer Potato Salad

Almost everything in your box this week could be added to a very simple summer potato salad – and it can be done so easily!



Green Beans

Bell Peppers






Potatoes: Boil or steam the potatoes until soft, chop into cubes. I never bother pealing my potatoes, but if you want to be fancier you can... Put in a bowl and chill. 

Green Beans: Remove the stems, steam for 3-5 minutes, until they lose their “crunch.” Drain and chill. 

Bell Peppers, Parsley, Onions, Carrots and Basil: Chop as much or little as you would like, toss with the potatoes and green beans. 

To top off the veggies, add salt and pepper. To make it picnic friendly, add apple cider vinegar instead of mayonnaise. Enjoy chilled!
