Nicholas’s Braised Green Beans With Fresh Tomato


1/2 pound green beans
2 garlic cloves, diced fine
1 medium tomato
2 Tablespoons olive oil
Several pinches of salt


Sauté the garlic in a large sauce pan until soft. Add the green beans, a pinch of salt and a tablespoon of water. Cover the pan for 8 minutes over a medium flame. Dice the tomato into medium size chunks. Add the tomatoes and another pinch of salt and cook until the tomatoes release their liquid and the beans are soft, another 8 to 12 minutes for a total of approximately 20 minutes of cooking. If the beans are cooking slowly, you can put the lid back on for a couple of minutes.
