Miso Soup with Kale and Daikon


2- 3 c. water
1/2 lemon, cut in 3 pieces
1 1/2 tsp. fresh ginger, peeled and finely chopped
1/4 c. miso
1 c. diced daikon
1 c. carrots
2 c. chopped kale (or chard could be substituted)


Put water, lemon, ginger and miso in a small soup pot and bring to a light simmer, stirring to dissolve the miso. Do not boil -- the probiotics in miso are sensitive to too much heat.  Add daikon and carrots and cook gently until the vegetables are tender. Add kale, stir and simmer 5 min, or until the kale is tender. Remove lemon pieces.
