Japanese Cucumber Salad (Sunomono)
According to Saeko and Naoki, all Japanese students learn how to make this super simple salad in school!
1 large painted serpent, or equivalent in other cucumbers
½ teaspoon kosher salt
3 Tablespoons rice vinegar
1-2 teaspoons sugar
1 teaspoon soy sauce
2 tablespoons sesame seeds, toasted
*If using a thick-skinned cucumber, peel your cucumber if you prefer, either entirely or in stripes
Slice your cucumbers thinly and evenly, use a mandoline slicer if you have one.
Sprinkle 1 teaspoon of salt on the slices and gently massage. Let sit for 5-10 minutes.
Mix the remaining ingredients, except sesame seeds, and adjust to taste. If you like a sweeter dressing, go with more sugar.
Squeeze the cucumbers to remove water, then add dressing. Serve immediately or refrigerate until ready to eat. This is best enjoyed within an hour or two of making.
Add sesame seeds right before eating.
