Green Beans with Lemon, Garlic and Shallots


1 pound green beans
1/2 tablespoon olive oil
1 tablespoon butter
1 garlic clove, minced
1 shallot, minced
1/2 teaspoon red pepper flakes
zest from 1 lemon
salt and freshly ground black pepper


Blanch your green beans in a large pot of well salted water until bright green (about 1 - 2 minutes). Drain and put your beans directly into a bowl of ice water. Heat a large heavy skillet over medium heat. Add the oil and butter. Add the garlic, shallots, and red pepper flakes and sauté for 30 seconds, until fragrant. Add the beans and continue to sauté until coated in the butter and heated through (3 - 5 minutes). Turn off the heat, add the lemon zest, salt and pepper.
