Green Beans & Tomatoes


5 slices bacon (optional)
1 onion - diced
All the heirloom tomatoes from your box - chopped into large chunks
All the green beans from your box - stem ends snapped off
Cayenne pepper to taste


If using, slice the bacon into 1 inch pieces and cook them in a large skillet.  Keep cooking until the bacon turns brown, then add the onion.  If you are not using bacon, heat some olive oil in your skillet, and once hot, add the onion.  Stir and cook until the bacon and onions are both nice and golden.

Add the green beans into the pan with the bacon and onions.  Add all the tomatoes, along with their juices.  Stir gently and then cover and reduce heat to low.  Cook for a half an hour.  

Add your cayenne pepper.  If you did not use bacon, you are going to want to add some good salt to taste, at the end of the cooking process!
