Chinese Stir Fried Greens

This is a basic recipe that works with all kinds of tender greens.

ingredients

2 tablespoons oil
1 tablespoon garlic, chopped
1 tablespoon fresh ginger, finely chopped or grated
4 cups braising mix, bok choi or other tender green
1 tablespoon soy sauce
1 tablespoon dry sherry
1 tablespoon sesame oil
1/2 teaspoon sugar, or to taste
1/2 tablespoon oyster sauce (optional!)
1/2 tablespoon cornstarch dissolved in 1/3 cup of water
salt and pepper to taste

instructions

Heat oil in a large skillet. Add garlic and ginger, and sauté over medium heat until golden. Add braising mix or other greens and sauté until the veggies are wilted but not fully cooked. Add soy sauce, sherry, sesame oil, sugar, and oyster sauce. Sauté another minute or two until the greens are just about cooked. Make a well in the center of the pan and pour in the cornstarch mixture. Stir everything around until the cornstarch boils and thickens. Take the pan off the heat, taste for salt and pepper (maybe a little more sugar, too!) and serve hot over steamed rice.
