Celery Root Remoulade

Celery root can be cooked as you would any root vegetable. You can mash it with potatoes, Chop it and roast it with beets and carrots, or add it to soup. This recipe makes celery root the main character though, and it's a fun side dish or first course.

ingredients

1 large celery root
1 tablespoon lemon juice
salt
1/2 homemade or store bought mayonnaise
2 tablespoons dijon mustard
1 tablespoon chopped capers
pepper

instructions

Peel the celery root and cut into thin, julienne slices with a sharp knife, mandolin, or food processor.  Toss it with the lemon juice and a pinch of salt.  Add the mayonnaise, mustard, and capers.  Toss again to combine.  Adjust the seasoning and add the pepper, and wait at least 15 minutes before serving.
