Caramelized Corn with Fresh Mint

Three or four ears of corn, kernels cut off the cob
2 tablespoons fresh mint, finely chopped
1 tablespoon butter


Melt the butter over high heat in a wide skillet.  Add the corn and cook, stirring frequently, until the corn is golden brown (about 10 minutes).  Stir in the mint and sprinkle with salt.  Taste and adjust the salt if needed. That’s it!  So easy!
