Broccoli Raab with Green Garlic
Recipe adapted from Ina Garten
1 big bunch broccoli raab
2 tablespoons olive oil
all the green garlic from your box, sliced into very thin rounds (white and light green part only)
1/2 teaspoon crushed red pepper flakes
1-1/2 teaspoons kosher salt
1/2 teaspoon black pepper
Cut off and discard the tough ends of the broccoli raab and cut the rest into 2 inch pieces. Heat the olive oil in a large pot. Add the garlic and cook over low heat, stirring occasionally, for 4 - 6 minutes, until golden brown. Remove the garlic with a slotted spoon and set aside. Add the broccoli raab to the hot oil. Add the red pepper flakes, salt and pepper and cook, covered, over low-medium heat for 5 - 10 minutes, turning occasionally with tongs, until the stalks are tender. Add the garlic back to the pot, check the seasoning, and serve hot.
