Beets with a Creamy Yogurt Dill Sauce
We made the most delicious and refreshing beet recipe for our farm dinner this past weekend. I hope you enjoy it!
All the beets from your box, boiled, peeled, cooled & quartered
1 cup whole milk plain yogurt
1/2 cup sour cream
3 cloves of garlic, minced fine
1/2 bunch of dill, minced fine
1/2 bunch of chives, minced fine
1/4 cup red onion, minced fine
3 tablespoons freshly squeezed lemon juice
Good sea salt, to taste
In a medium sized mixing bowl, mix together all of the ingredients except for the beets. Add a good pinch of salt, taste, and adjust the salt and the lemon juice if needed. We like ours very lemon-y! At this point you can either mix this yogurt sauce into the beets (which will turn everything into a lovely shade of fluorescent pink) or spoon the beets onto a serving platter and spoon the yogurt sauce on top of that (keeping the sauce white). I like the pink version!
