Miso Glazed Roasted Vegetables

This recipe comes to us courtesy of CSA member Sarah who says: "I wanted to share a super simple recipe that I came across while teaching summer cooking camps. It has been a go to recipe of mine. This 1:1:1 recipe easily scales up or down for the amount of veggies you roast. It is also great with summer squash, onions, broccoli, cauliflower, chicken and so much more! Very versatile and simple!”

Sarah's original recipe was for one bunch of carrots, but use with any and all vegetables!

ingredients

1 T white miso paste
1 T soy sauce
1 T brown sugar
2 cloves garlic minced

instructions

Roast carrots (and/or other vegetables) on parchment. Mix glaze ingredients in a bowl. Half way through roasting, brush glaze on to carrots and finish roasting.
