Spinach (Banana) Muffins
1/2 cup unsweetened applesauce
1 large ripe banana, mashed
1 large egg
2 teaspoons vanilla extract
1 1/2 cups fresh spinach, packed
1/3 cup sugar
2 tablespoons vegetable or canola oil
1/2 cup all purpose flour
1 cup white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1. Preheat oven to 350 F.
2. Place the first 7 ingredients in a food processor and puree.
3. Place the remaining ingredients in food processor and pulse just until combined.
6. Scoop batter into a greased muffin tin, spreading evenly among the 12 muffin cups .
7. Bake for 12 minutes or until the muffin top springs back when you gently push on it.
