There are days when it seems that Full Belly Farm has been overtaken by cabbage. The cool months in the fall, winter, and spring allow us to grow green cabbage, red cabbage, napa cabbage, and savoy cabbage, all members of the brassica family. Cabbage is rich in vitamins, and actually contains more vitamin C than oranges! Cabbage is also rich in vitamin K, potassium, iron, and is low in fat and calories. Experiment with salads that utilize some wilted cabbage — just massage a bit of salt into the chopped cabbage and then let it drain.  Cabbage is also good in soups and stir fries.
