Spicy Cabbage with Bacon and Tomatoes

  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 1/2 cup diced lean bacon
  • 1/2 head green cabbage, thinly sliced
  • 1/3 can plum tomatoes in juice, shredded with your fingers
  • 1 teaspoons sambal oelek (Indonesian Hot Sauce) – or more to taste
  • 1/2 lime

Heat the oil in a large sauté pan and add the onion. Cook over medium heat for 5 minutes, then add the bacon. Add the cabbage to the pan and mix well.  Cook for 8-10 minutes over medium high heat, stirring often. Add the tomatoes and sambal, and stir well to combine. Lower heat to medium and cook for 10 minutes. Serve hot. Enjoy!
