Dru’s Butternut Squash Pie – (better than pumpkin!)

This recipe makes one 9”- pie. When you make the crust, try grinding up some walnuts in your Cuisinart and substitute a quarter cup of this for the flour in your pie crust recipe. Delicious!

ingredients

One large butternut squash
1 tsp cinnamon
1 tsp ginger
1/4 tsp allspice
1/2 teaspoon salt
Pinch of nutmeg
3/4 cup sugar 
4 tablespoons molasses
3 eggs
1 cup cream or half and half
One pie shell 

instructions

1. Bake one large Butternut squash or two small in the oven at 350° until very soft and then cool to touch. Scoop out the squash flesh and blend in blender or Cuisinart until very smooth.
2. Add the spices, sugar, and molasses to the squash in the Cuisinart and mix until well blended.
3. Add the eggs and blend again until smooth. Add the cream or half and half and blend just quickly to mix.
4. Pour into pie shell and bake for at 375° for 40 minutes or until well set.
