Dino Kale or Bok Choi with Garlic Sauce

About 1 1/2 lbs. bok choi, or other green, like dino kale

1 tablespoon peanut or sesame oil

2 tablespoons coarsely chopped garlic

2 tablespoons soy sauce

instructions

Bring a pot of lightly salted water to a boil.  Trim the ends from the greens.  Blanch the greens in water until just tender (1 minute for bok choi, longer for other greens).  Drain and set aside.  Heat the oil or a skillet over medium high heat.  Add the garlic and cook until lightly browned (1 - 2 minutes).  Add the soy sauce and 1 tablespoon of water.  Cook for 1 minute.  Pour the garlic sauce over the greens and serve.
